Definition

The term ice cream refers to a very popular type of cold food that comes in a large number of varieties. Everyone, from children to the elderly, knows it but its precise definition contains a certain complexity.

We would name the ice cream as:

"Food preparations that have been brought to a solid, semi-solid or pasty state by freezing simultaneously or after mixing the raw materials put into production and that must maintain the degree of plasticity and sufficient freezing until the moment of their sale to the consumer "

We will differentiate between six types:

1. Ice cream

2. Milk ice cream

3. Skim milk ice cream

5. Water ice cream

6. Sorbet

Finally, we will give the definition of Ice cream desserts, which will be “any presentation of the ice creams defined in this section, in any of their varieties or their mixtures, which are subsequently subjected to a process of preparation and decoration, with food products suitable for human consumption."

A short history...

In 1660, the Italian Procopio invented a machine that homogenized fruits, sugar and ice, thus obtaining a real ice cream, similar to the one we know today. Procopio opened the "Café Procope" in Paris, where, in addition to coffee, ice creams were served and thus became popular.

For many years, Italian ice cream makers jealously guarded the secret of ice cream preparation, although as street vendors they spread it throughout Europe. By the 18th century, ice cream recipes began to be included in cookbooks.

In our country, until the middle of the 19th century, ice arrived from England or the United States in bars wrapped in sawdust. The first to serve 'ice cream' refreshments were the "Café de Paris", the "Café de las Armas" and the "Café de los Catalanes". Gradually ice cream parlors appeared.
